Wheat-free pizza

The one thing I have definitely missed while avoiding wheat and sugar is pizza. So when we made pizza bases at home the other night I took up the challenge of creating my own wheat-free pizza. I used oats for the making of my creation and it worked out even better than expected!


250 g blended oats
1 teaspoon salt
150 ml lukewarm water
5 g yeast
2 tablespoons corn flour (Maisena)
1 egg (beaten)


Place the oats and salt in a bowl. Make a well in the center. Stir the yeast into the lukewarm water. Pour the water with yeast and the beaten egg into the well. Slowly bring in the oat mixture with a fork until combined. Add 2 tablespoons of corn flour and knead the dough for a few minutes. Cover in corn flour and set aside for 10 minutes, at room temperature, to allow to firm.

Roll out the dough into a pizza shape and place on a baking tray. The rest of the recipe is just like a normal pizza. Spread on a tomato paste and sprinkle with cheese and your preferred toppings. Cook in the oven at 180 degrees C for 8-10 minutes.

I topped my pizza with mushrooms, olives, ham and caramelized onions. Delicious!
