These delicious delights just melt in your mouth as you munch on the soft, warm cake drenched in sweet honey. Licking your fingers, the cupcakes seem to whisper your name, coaxing you into having another. Oh sweet, sweet bliss.
I made a batch of these this afternoon and through mouths full of cake, they received the family’s stamp of approval. These are perfect for a tea time do or when you’re craving something sweet. These cupcakes are wheat and sugar-free and so no guilty conditions apply.
1 cup uncooked rice
1 cup oats
3 teaspoons baking powder
4 tablespoons melted butter
1 cup milk
1 teaspoon vanilla essence
2 tablespoons of honey (plus more to swirl over afterwards)
1/2 teaspoon cinnamon
Preheat the oven to 180 degrees C.
Combine all of the ingredients in a bowl and mix until combined.
Line a muffin tray with cupcake holders. Spoon the mixture into the cupcake holders.
Bake for 15 mins in the oven at 180 degrees C.
Remove from the oven and swirl a bit of honey over each cupcake. Allow to stand for about 10 minutes before enjoying these cupcakes.
