I’ve been experimenting with chia seeds and have been trying to come up with a whole lot of new recipes. This version is vanilla and cinnamon flavoured and topped with berry coulis.
Mix together 50g chia seeds, 1 cup of milk, 2 tablespoons honey, 1 teaspoon vanilla and a sprinkle of cinnamon. Spoon the mixture into jars and place in the fridge overnight. In the morning top it with a berry coulis. To make the coulis heat the berries in either the microwave or over the stove until a thick sauce forms. Spoon over the set chia pudding.
