I absolutely love farmer’s markets. This is probably because of my love for gardening and so ignites in me an admiration for these people that can produce so many fresh fruits and vegetables. It also encourages and inspires me to keep on doing what I love and journeying this path of self-sustainablity. In the June-July holidays I joined my mom and dad in Wilderness for a holiday. One of the places we went to was the Outeniqua Farmer’s market in George. There we bought this lovely vibrant and leafy spinach.
I made a really lovely salad with this fresh produce.
Slice 3 baby marrows/zuccinis into slithers with a vegetable peeler. Fry this is a tablespoon of olive oil. Toss together with roughly chopped spinach and sliced green beans. Squeeze over some lemon juice and serve.
