Seed Loaf

This seed loaf is the perfect replacement to bread. It is free from wheat and packed with nutrients that will sustain you. You can use it for a sandwich for lunch or as toast for breakfast. It was so delicious that it barely lasted a weekend in our house. We will definitely be making this on a regular basis!

1 cup polenta
1 1/2 cup oats
1 teaspoon baking powder
1 teaspoon salt
500ml Greek yogurt
1 tablespoon honey
3/4 cup seed mix (this mix contained pumpkin seeds, linseeds, sesame seed and sunflower seeds)

Preheat the oven to 180 degrees C. Mix all of the ingredients together in a bowl with a wooden spoon. Place in the batter in a greased bread baking tin. Cook at 180 degrees C for 45 minutes. remove from the tin and allow to cool on a cooling rack.
