Today calls for a celebration! The reason being that my dearest, darling mother has been without wheat and sugar for a whole week! It’s important to recognise these small milestones along your journey towards a healthy lifestyle as it encourages you and motivates you to keep up the good work. In honor of my mamma I am posting a recipe thought up and created by her. It is polenta pizza and truly is a delicious addition to any meal.
Bring 1 litre of salted water to the boil.
Add 1 cup polenta* and stir constantly until it thickens (about 1 minute)
Spread a medium layer of polenta into 2 pie molds and leave to set for 15 minutes.
Top with grated cheese, sliced cherry tomatoes, mushrooms, basil pesto, slices of mozzarella cheese and a generous grinding of salt and pepper (You can add any toppings that you would like).
