After seeing countless food blogs post their gorgeous photos entitled ‘Pancake Sunday’ I have finally created my own! These pancakes are based on polenta and oats and have delicious flavours of orange and cinnamon sneaking through.
1/2 cup oats
1/2 tsp cinnamon
1 teaspoon vanilla
1/2 teaspoon baking powder
1/2 cup milk
1/2 cup polenta
juice and pulp of one orange
Mix together all of the ingredients adding the polenta and orange juice only just before you begin frying. Spoon 1 1/2 tablespoons of batter into a greased pan and fry like normal pancakes. The idea is that these pancakes are ‘American Style’ and so are thick and more like flapjacks.
Melt 2 tablespoons of butter in a pan. Add 2 tablespoons of honey.
Stir in the zest and juice of 2 oranges and simmer for 10 minutes.
Add the segments of 2 naartjies.
Simmer for a further 2 minutes.
Spoon the orange sauce over the pancakes and enjoy! These can also be served with double thick yogurt to add a creamy element.
