Wow week 8 of living a healthy lifestyle! That’s two months of wheat and sugar-free eating for me.
Many people, upon hearing that I have cut out wheat from my diet question what on earth I eat for lunch if bread isn’t an option. Yes, this does take away the ever convenient sandwich in a lunch box but has definitely broadened my options for lunch time at school. I now relish in countless different salads at school and the options really are endless.
My aim for the next few weeks is to take you for a walk through my lunch box (wow that sounds a lot more romanticized than it really is) and show you that living without wheat really isn’t as difficult and inconvenient as you originally thought.
This is a recipe for a mielie and tuna salad which is as easy as it is delicious!
Cook one mielie either in the microwave or over the stove.
Microwave: place the meilie and a small amount of water in a bowl. Cover with a lid and cook for about 5 minutes. When you pierce it with a knife it should be soft.
Stove: Place the mielie in a pot with cold water covering it. Bring the water to the boil (with the mielie in the water) and then cook for a further 5 minutes.
Once you have cooked the mielie slice the corn off the cob and place in a bowl. Add 1 can of tinned tuna and crumble 1 round of feta over it. Mix it all in and add a few chopped leaves of basil and voila!
A deliciously healthy low carb salad that is high in protein to sustain your energy levels.
