My mom bought some corn flour (naturally wheat-free) and so we decided to experiment. What we came up with was these deliciously light and scrumptious pancakes. These contain no sugar and so are wonderful in savory dishes. We served this with an Asian sticky honey and soy pork sauce. Absolutely delicious!
If you intend on making these sweet pancakes just add a bit of honey to the batter.
Whisk together 10 tablespoons of corn flour (South African brand: Maisena), 2 cups of milk and 3 eggs.
Fry them in a lightly oiled pan just as you would with normal pancakes.
