Corn, avo, spinach and feta salad

After the spinach in my garden began to flourish I began looking for an excuse to use it. This salad was the lucky winner. Oh my, how refreshing and delicious it is! A perfect light lunch on a warm summer’s day: a corn, avocado, spinach and feta salad. IMG_7603

So that’s it.

Cook the corn either in the microwave (place in a covered dish with a small amount of water and cook for 5 mins or until soft) or on the stove (place in a covered pot with some water and cook until soft).

Slice the corn off the cob. Shred the spinach. Slice the avo and feta. Mix it all together in a bowl, season with salt and pepper and there you have it; a delicious and healthy lunchtime meal.
