Cauliflower Rice

So since the whole Tim Noakes craze started, cauliflower has received an alarming amount of attention. The reason cauliflower became so trendy is because it can be used as a substitute to many high calorie carbohydrates. With a very low calorie count and the many nutritional benefits of cauliflower; things like cauli-pizza and cauli-rice emerged.

So here is my take on cauliflower rice, inspired by the South African cookbook “Low-Carb is Lekker”. It is ridiculously simple and a perfect substitute for normal rice if you’re trying to avoid carbohydrates at night (like me!).


To begin blend one head of raw cauliflower in a food processor. Blend it until it has reached a consistency similar to that of couscous.


In a pot over the stove melt 2 tablespoons butter. Then add the blended cauliflower and salt to taste. Cook for about 2 minutes, while continually stirring. Remove from the heat and cover with a lid allowing the rice to absorb the remaining heat.

660It is delicious served with curry or any other dish that would normally be served with rice!
