As the school run begins again we are hit once more with the never-ending question: What should I put in the lunch box?
Dun-dun-dun-duuuuuuun. Rock Paper Scissors to the rescue!
This chickpea and butternut salad is super delicious, packed with energy and protein to sustain you throughout the busy day and makes for an exciting change from the usual school lunches. It takes a little longer to prep so I suggest doing it the night before. Chop 1/2 of a butternut into small cubes and place in a microwave safe dish. Add a small amount of water and cook in the microwave for about 10 minutes until soft. This can also be roasted if you have the time. Fry 1 chopped onion and a clove of crushed garlic in 1 tablespoon butter. Add one can of chickpeas and saute. Add cooked butternut and mix it all together. Add salt and Moroccan rub to taste.
