Breakfast Oat Bake

This oatie delight is incredibly moreish yet simple to make. The oats imply a breakfast meal but it is so delicious it can be served as a dessert. My younger brother Nic has not been so enthusiastic about my healthy eating endeavors, usually turning his nose up at my interesting culinary creations. But not this time; even Nic enjoyed this dish, saying it was delicious. I made it last night at 9 pm and it was demolished by the morning. Now that is what I call a hit!

2 cups rolled oats
1 teaspoon baking powder
1 teaspoon cinnamon
pinch salt
1 cup frozen or fresh berries
2 cups milk
1 egg
3 tablespoons melted butter
1 tablespoon vanilla essence
1 ripe banana
2 tablespoons honey

Preheat oven to 180 degrees C.

In a large bowl mix together the oats, baking powder, cinnamon, salt and berries.

In another bowl whisk together the milk, egg, butter, vanilla essence and honey.

Pour the oat mixture into a casserole dish. Slice the banana and place the slices on top of the oats. Drizzle with honey. Pour the milk mixture over everything. Gently shake the dish so that the milk mixture goes through all the oats. Bake for 30 minutes or until the top is golden brown and the milk mixture has set.

Serve warm with a drizzle of honey for extra sweetness.
