Blackberry and banana oat muffins

These healthy muffins are the perfect way to start your day as a delicious breakfast. They are the perfect wheat and sugar-free option to satisfy your sweet tooth.

Ingredients:
2 cups of blended rolled oats
1 tablespoon honey
120 g butter
2 eggs
3 ripe bananas
65 ml water
1 1/2 teaspoon baking powder
1 teaspoon bicarbonate of soda
salt
2 teaspoons cinnamon
1 teaspoon vanilla essence
1 cup frozen blackberries

Cream the butter. Stir in the mashed bananas and beat in the eggs. Sift in the oats and salt. Stir in the honey, vanilla essence and cinnamon. Dissolve the bicarbonate of soda in the water. Add this to the mixture and stir in the baking powder. Stir in the frozen berries.
Grease a muffin tin and pour in the mixture. Cook for 15 minutes at 180 degrees C. 079

This can also be made as a loaf. Instead of pouring the mixture into a muffin tray, pour it into a loaf tin. Cook at 180 degrees C for 45 minutes.
