Berry Ice Cream

While strolling along the vibrant promenade of Camps Bay my friend, Caitlin, licked a scrumptious-looking ice cream. It looked so delicious and I was immediately hit with a deep craving for ice cream. I decided my ice cream maker needed to be hauled out of the cupboard and so I put it to use making this divine berry ice cream! 364

handful of frozen berries
1 tablespoon honey
1 teaspoon vanilla essence
2 tablespoons milk
100ml double cream yogurt

Place the berries into a pan on the stove and add some water, the vanilla essence and honey. Stir every now and again, crushing the berries to create a thick coulis. Let the mixture sizzle over a low heat until it has thickened. Then add this to the milk and yogurt in a bowl. Chill in the fridge until cooled to 5-10 degrees C. Churn in an ice cream maker for 20 to 30 minutes or until the ice cream has formed.
