When I first began blogging about health I started following many other health bloggers for inspiration. After scrolling through countless Instagram accounts of the likes of @flourishinghealth and @vanillacrunch I came to the realisation that no blog could be considered worthy of ‘health status’ without the presence of a few hundred posts on chia pudding (oh and sunday pancakes of course! Check out my version here ).
Chia seeds are the new craze. At first I didn’t really get what the fuss was all about but after researching the amazing health benefits of these little babies I finally understood. They are a little on the pricey side but you don’t have to use too many at a time and it kinda makes them a special treat.
They are PACKED with Omega 3 and 6, fiber and protein. They are therefore a very good addition to any vegetarian’s diet as a large amount of protein can be consumed through just a few seeds. They are also very popular in weight loss diets as they deliver a massive amount of nutrients with very few calories.
To make this delicious chia pudding you’ll need to start the night before, allowing it to refrigerate overnight.
Mix together 50g chia seeds, 1 cup of milk, 2 tablespoons honey, 1 teaspoon vanilla, 1 handful smashed berries and a sprinkle of cinnamon. Spoon the mixture into jars and place in the fridge overnight. Serve with greek yoghurt and homemade granola.
