Recently I’ve come across beetroot in various smoothies and juices. This vegetable which is typically something served in a salad or in a roast veg dish has made its debut in the blender. Farm stalls and flea markets alike have adopted beetroot, and this vibrant vegetable now sits alongside carrots, ginger, celery and other raw foods to create juices and smoothies that actually taste organic.
My first experience was a delightful beetroot, carrot and apple juice at the Oumeul farmstall in Riviersonderend. It was a refreshing break in the long journey between Cape Town and our holiday house at Malagas, Breede River.
My next encounter wasn’t quite as delicious. I had been eyeing the juices of varying bright colours that were being served at the Bay Harbor Market. I eventually decided on one that contained beetroot, carrot, apple, ginger, lemon and celery. I definitely under-estimated the power of that ginger and the back of my throat burned as I tried to slowly sip at the scarlet liquid.
1 medium beetroot
1/2 cups Greek yogurt
1 tablespoon honey
2 tablespoons milk
Grate the raw beetroot and slice the apple. Place the beetroot, apple, yogurt, honey and milk in a blender. Whizz until smooth. Enjoy for breakfast or as an afternoon snack.
I know it seems a bit weird to have beetroot in a smoothie but it really does taste delicious and is rich in antioxidants and other good stuff. And finally can we just take a moment to appreciate that colour!
