Asian Pork Casserole

Here’s another delicious one-pot-wonder that is both healthy and easy to make! Try this dish out the next time it’s your turn to make supper for the family. Moms- this is a great dish to make if you’re short on time after a busy day during the week.

Preheat oven to 180 degrees C.
Chop 750g shoulder pork chops into cubes and brown in olive oil in a pan over the stove.
Place in a casserole dish.
Fry 2 chopped onions and then add a clove of garlic (chopped).
Place in the casserole dish.
Dice 2 apples and chop 3 carrots.
Place in the casserole dish.
In a jug/bowl dissolve 2 tablespoons of chicken stock in 2 cups of boiling water. Add 3/4 cup soy sauce and 2 teaspoons of apple cider vinegar.
Pour sauce over pork and veggies in the casserole dish.
Cook for 40 mins at 180 degrees C.
Serve with jasmine rice.
